favorite mom approved lunches

As a new mom, I’m always trying to find the quickest way around everything. It’s so secret that I hate cooking, so when it comes to kitchen time I try to minimize it the most I can.

These few recipes have been my go-tos lately. Quick & tasty, but also not all that bad for ya!

/ / Pita Pizzas / /

These bad boys only take about 15 minutes to make and are sooo delicious. You can really add anything to them, but tomatoes and olives are my obsession right now.

Preheat your oven to 375.

Coat pita bread with olive oil and Italian seasoning. Sprinkle with mozzarella cheese and desired toppings.

Bake for 10 minutes and devour.

/ / Avocado & Tomato Bagel Thins / /

See a trend here? Warm weather calls for delicious tomatoes!

I’ve been loving bagel thins lately. They’re all the taste of an everything bagel with only some of the carbs! Make sure you’ve got a perfectly ripe avocado and a juicy tomato. Put it all together with a little salt and BOOM, quick easy lunch. But be careful cause it can get messy.

And if you’re feeling ballsy, add some mozzarella cheese.

/ / Roasted Veggies / /

These can be eaten many different ways, but mine is just with some Everything but the Bagel seasoning. Make sure you make some extra, they make wonderful leftovers.

Preheat oven to 400.

Chose your favorite veggies, make sure they’re nice and cleaned. Chop them into bite size pieces.

Spread them on a sheet pan, toss in olive oil and salt (and pepper if that’s your jam).

Bake for 1 hour.

  1. Yessss to Pita Pizzas! Sometimes we just go with plain bread pizzas but they are not as good. We also like the veggie mix with salt, pepper, garlic and lemon 🙂 Thanks for sharing!

  3. Awesome idea! As a mom, if lunches are quick AND easy… sign me up! I love this particular idea because you can make it as healthy as you want and tailor it to your own child’s taste. I’m definitely going to have to put this on the menu for this week.

    1. When LG was brand brand new I lived off granola bars because she wouldn’t let me put her down. Now that she can watch me or she’s sleeping, I actually get time to make something! Let me know how you like it!

    1. I feel like as moms we try to be all pinteresty and creative. These are both, but soooo simple! And healthy!
